The Easiest Way to Make a Healthy Meal on the Fly

So you want to be a wrap superstar? Hip hop and rap have never been my thing - but there’s something about this song - Rap Superstar by Cypress Hill from many years ago that still gets me EVERY time.  It’s just so catchy and I can’t get it out of my head for days after hearing it.   The lyrics, not so much- it's just more of the energetic vibe, the chorus... It’s SO GOOD, in fact, that some local LA top 40 pop and alternative stations still include it in their rotations and play it every now and then.

But, let me reel myself back in! - because this post is not anything about a catchy song it’s just that that song got my thinking the other day about -one of the easiest, most creative, and fun ways I know to make a healthy meal on the fly - WRAPS!    The options are endless and make great options for breakfast, lunch, or dinner.

All it takes is gathering a few simple, whole-food ingredients from your pantry and fridge, a desire to make use of what you have, and get creative.

The wrap itself can be so many things from collard leaves to butter lettuce cups…to organic raw wraps (there are some great options in health food stores now and Amazon - I like Wraw Wrap and Raw Wrap brands - both are veggie based, gluten free and include quality organic ingredients like apples, zucchini, coconut, flax seeds, turmeric and other spices and come in several varieties.  You can also look for Coconut Wraps simply made with organic coconut meat, coconut water and coconut oil (check out Nuco brand) - again non-GMO, vegan, gluten free and paleo.

The fillings?  Endless options here!  Think veggie first - use what you’ve got on hand - from yesterday’s leftover baked yam or roasted veggies, to shredded cabbage, carrots, jicama, radish, and cucumber…to sprouts and beans. Isn’t it exciting just thinking about all of the possibilities?

Do a spin on TACO TUESDAY with a wrap party - set out a variety of raw and cooked vegetables, shredded cabbage or lettuce, guacamole, salsa and beans and cooked quinoa.

A quick breakfast option is a gluten-free tortilla or coconut wrap filled with scrambled cage-free organic eggs and sautéed spinach or almond butter with some sliced banana and sprinkling of cinnamon.

For a balanced wrap include:

  • Tons of fresh veggies - for all of the phytonutrients, antioxidants, fiber!  Raw, roasted, baked or sauteed

  • Healthy fat - I love organic hummus & avocado or lots of vegetables sauteed or roasted in olive oil

  • Clean protein - nut butter, beans, eggs, or organic/grass fed meat or wild caught fish (if animal protein is part of your unique diet)
